Here is a Dutch recipe most suitable for St Valentine’s Day. Hearty food for the hot-blooded.
Boil the potatoes until tender. Meanwhile, cook the onions and tomatoes in a little oil until they are almost a purée.
Purée the potatoes, add the butter, milk and seasoning, and pile onto a serving dish in a pyramid. Surround with the tomato mixture and top with grilled bacon.
