Method

Use bones and chicken cooked in the oven until browned, and use chicken stock instead of water. Deglaze the roasting pan with stock after the chicken is browned, pour the resulting liquid over the bones, and cook as for white chicken stock. After the stock is strained and the fat removed, reduce by one-third or a half depending on the strength called for.
