My friend Julia showed me this. This amount of dough will make you two pizza bases — you can freeze the unused half of dough once it has been punched down. Stracchino is a sour creamy cheese.



  • 185 ml(6 fl oz/¾ cup) warm (comfortable to your fingers) water


For the dough, put the water, yeast, honey and oil in a large bowl with a fistful of the flour. Mix with electric beaters until smooth. Cover and leave for 30 minutes or so until it all froths up and looks foamy on the top. Add the rest of the flour and ½ teaspoon of salt. Mix well with your hands —
