This is an all-purpose rub that’s great on all things, but especially burgers, steaks, and roasts. I recommend making a big batch, because once you try it, you tend to put it on everything: beef, pork, chicken, venison. I literally never eat burgers without it anymore. The rub will keep in your pantry for up to six months.


  • 1 cup (200 g) granulated sugar
  • cup (65 g) light brown sugar
  • cup (60 g) Diamond Crystal kosher salt
  • ¼ cup (40 g) garlic powder
  • cup (75 g) Lawry’s seasoned salt
  • cup (75 g) celery salt
  • ¼ cup (55 g) onion salt
  • ¼ cup (25 g) smoked paprika
  • 3 tablespoons chipotle powder
  • 1 tablespoon freshly ground black pepper
  • ½ teaspoon lemon pepper
  • ½ teaspoon ground dried thyme
  • ½ teaspoon ground sage
  • ½ teaspoon mustard powder


In a medium bowl, stir together all the ingredients until combined. Transfer to a container with a tight-fitting lid and store in a cool, dark place for up to 6 months.
