You can make pouring fondant icing from fondant icing powder, which is available in supermarkets under the Silver Spoon range. However, it is also extremely easy to make your own and then flavour it with whatever you fancy – including chocolate, which always goes down well!

  • 450 g icing sugar, plus extra for dusting
  • 1 egg white
  • 50 g liquid glucose (at room temperature)
  • 4–5 tsp water

Sift the icing sugar into a large bowl. Make a well in the centre and add the egg white and the liquid glucose. Beat, drawing the icing sugar into the centre until the mixture creates quite a stiff paste.

Turn the paste out onto a board that is lightly dusted with sifted icing sugar, and knead until the paste loosens. Return the paste to a bowl and beat in enough of the water until you have achieved the right pouring consistency. Use as required.
