Unsweetened (alkalized) cocoa powder added to the filling gives the perfect balance of chocolate without overwhelming the pecans. Add cup (sifted into the cup and leveled off)/1 ounce/28 grams to the egg yolk mixture before cooking the filling. Because the filling will be slightly deeper, be sure to coat the underside of the foil ring lightly with nonstick cooking spray to keep it from sticking to the surface of the filling. You can also use the Sweet Chocolate Cookie Tart Crust in place of the Sweet Cookie Tart Crust for either version.
