  • 20 last-season carrots

Method

Juice the carrots and bring to the boil in a saucepan. Turn off the heat and the carotene will split away and come to the top. Use a ladle to skim off the carotene into a fine strainer lined with muslin (cheesecloth). Store in an airtight jar in the fridge for up to 1 year.
