Ingredients: 150 g icing sugar; 2 or 3 slices fresh root ginger, chopped; 3 peppercorns; ½ cinnamon stick; 8 cardamom pods, crushed; red chillies, to decorate (optional); 2 strong everyday tea bags; 170 g unsalted butter, diced, plus more for the tin; 150 g unsalted butter; 1-2 tbsp ginger syrup, from a jar of stem ginger; 230 g golden syrup; 20 green cardamom pods; 2 tsp ground ginger; pinch of salt; 230 g dark muscovado sugar; juice of ½ lemon; 280 g self-raising flour; 350 ml whole milk, plus more if needed; 2 eggs, lightly beaten; 2 pieces of very finely chopped stem ginger (optional); 1 tsp ground cinnamon

One of my favourite drinks in the world is strong, sweet masala chai, brewed in every home all over India. Here I have turned it into a delicious cake. First, make your tea. You will need 200 ml for the recipe. If you wish to drink a cup of tea while you bake, just double these quantities!
