“Massage” a salad? We were thinking the exact same thing when we first heard it.

During one of our potluck dinner parties, our friend Anne Lee from the dojo contributed this kale salad massaged with avocado. We were blown away by its wonderful flavor, and the “massaged” part was extra-intriguing. She told us she had been inspired by her best friend’s recipe and that massaging mashed avocado into the kale leaves makes them softer and more tender.

Giving a delicate rub and some loving avocado touch to the leaves makes them very easy to eat, and the flavor of the avocado still comes through. To season the salad, all you need is a nice squeeze of fresh lemon juice and a little salt and pepper. After that, you can customize your toppings to make this massaged salad completely your own.

Ingredients

  • 1 bunch kale (about ½ pound / 225g), ribs and tough stems removed
  • 2 avocados: 1 mashed, 1 chopped
  • Fresh lemon juice
  • Zest of 1 lemon
  • Kosher or sea salt and freshly cracked pepper
  • 1 small cucumber, chopped
  • ¼ cup (23g) toasted sliced almonds

Method

Directions

  1. Cut the kale leaves into thin strips. In a large bowl, combine the kale and the mashed avocado. Gently “massage” the avocado into the kale leaves until they become soft and tender.
  2. Add 1 tablespoon of lemon juice and the lemon zest. Toss lightly.
  3. Season to taste with salt and pepper. Add additional lemon juice, if desired.
  4. Just before serving, add the chopped cucumber, the chopped avocado, and the almonds.
