Our friends and guests dubbed this warm cheesy dip the “crack dip.” It’s a guilty pleasure that everyone is addicted to, regardless of how full they are. They can’t stop eating it until the bowl is swiped empty with the last piece of bread. Part of what makes this crack dip extra-special is baking it until a charred brown crust forms on top; this brings out the smoky flavor of all the melted cheese and sweet onion.   • 1 (8-ounce / 225-g) package cream cheese (very softened)
  • 1 cup (240ml) mayonnaise (preferably Best Foods brand)
  • 1 cup (100g) freshly grated Parmesan
  • 1 cup (160g) diced sweet onion
  • 1 tablespoon freshly cracked black pepper
  • Crusty bread or crackers



  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, place the cream cheese. The cream cheese must be very soft (like spreadable butter) to allow all the ingredients to blend evenly. If your cream cheese needs to soften more, place it in the microwave for a few seconds.
  3. Add the mayonnaise, Parmesan, onion, and pepper and mix until everything is thoroughly combined.
  4. Pour the mixture into a 6-inch (15-cm) baking dish or any oven-safe dish. Bake for 40 to 50 minutes, so all the ingredients meld together. When the top crust is brown and almost burnt-looking, the dip is ready. The darker brown the crust becomes, the better the flavors are.
  5. Serve with your favorite crusty bread or crackers.
