A wintry selection of root vegetables is a great accompaniment to almost any main course you might concoct, even fish dishes. In a mixture like this, the roots work in perfect harmony. Here I’ve used the obvious ones, but you could add salsify, or possibly kohlrabi - that alien-looking vegetable with a turnipy-radish taste.
