Quinces keep well enough for a week or so, but should you be faced with a glut, don’t let them go to waste. They are far too valuable and rare a flavouring for both savoury and sweet dishes. The quince purée given below can be frozen in small batches, to be used for sauces, pies and tarts, as well as for this heavenly ice cream.
Other thick fruit purées can be used instead of the quince purée.
