Ingredients

  • 2 lbs. of potatoes
  • 1 lb. of apples, peeled, cored and sliced, a few blood sausages, sliced, and cooked in butter, breadcrumbs, butter, salt and pepper. White wine, sugar.

Method

Boil the potatoes, but leaving them quite firm, and peel. Put them in a saucepan with the sliced apples and a little water, and simmer till all the water has evaporated and the apples are tender. Then add a little butter, and season with salt and pepper. Put the potatoes in the middle of a hot dish, cover with breadcrumbs fried in butter till brown, around them put the cooked sausages, sliced, and then the apples, sprinkled with a little white wine and sugar.
