Method

Soak the pickled pork for a few hours in cold water. Then put it in a saucepan with cold water, bring to the boil and simmer till tender. When done, drain, put the meat in the centre of the dish, pour over it 3 or 4 tablespoons of butter, which should be cooked to a nutty brown, and to which 1 chopped onion has been added, and around the meat put the cooked sauerkraut.
