Make a dough with a ½ lb. of flour and 2 ozs. of yeast dissolved in 1 cup of warm milk, work well, put it in a basin, cover and let it stand. Work 1½ lbs. of flour with 1 pint of warm milk, a good pinch of salt, 2½ ozs. of butter, and the dough containing the yeast. Shape into rolls, brush over with yolk of egg and put in a hot oven, lowering the temperature after 8 to 10 minutes.
