I love using vegetable alternatives to make a classic pasta or grain dish – Cauliflower Couscous is an example and here is another. Pale green, firm and smooth pointed spring cabbage, sometimes called sweetheart cabbage, is one of my favourite vegetables; it’s crisp but tender, with a fresh, delicate flavour. I love shredding and tossing it in olive oil, lemon juice and sea salt for a very quick salad side dish; cutting it into wedges and baking it in tomato sauce; and, perhaps most of all, cooking it in the style of pasta.
