An old-fashioned sweetened vinegar cordial, this can be made with any of the berry fruits – raspberries, blueberries, blackberries, black- or redcurrants – fresh or from the freezer.

Serve as you would any other cordial, diluted with still or fizzy water, or shake it over ice with its own volume of gin for a sophisticated Christmas cocktail. Since cranberries are particularly high in vitamin C, it’s a useful cold remedy: dilute to taste in boiling water and stir in a spoonful of hon
