Two of the simplest and most wonderful ways of serving aubergines are Turkish. Slices cut lengthways are fried in hot oil, topped with thick yogurt or with fresh tomato sauce, and served cold.

For every day, do one or the other. But for a party it makes an attractive presentation to do both. Slice the aubergines into smaller rounds and alternate the two toppings as in a chess board.
