This popular salad can be served with everything.

Ingredients

  • 1 small cos lettuce or ½ small white cabbage, shredded
  • 3 firm tomatoes, diced

Method

Mix together the lettuce or cabbage, tomatoes, green pepper, if using, cucumber, onion, radishes, if using, parsley or coriander and mint, if using.

To make the dressing, beat together the oil and lemon juice and season to taste. Just before serving the salad, pour over the dressing and mix well.
