This white bean salad is the most common appetiser in Turkey.


  • 250 g (8 oz) white beans, soaked for at least 1 hour
  • 1 large onion, chopped


Drain the beans, boil in fresh water for 10 minutes, and then simmer for about 30 minutes.

Cook the onion in the oil until soft, add the garlic and brown slightly. Add the celery, carrot, tomatoes, sugar and salt to taste. Stir in the drained beans and enough water to cover. Cook, covered, for about 1 hour. Serve cold.
