Bulgar wheat is the staple of Turkey and the part of the Arab world which was called the Fertile Crescent. It is nourishing and very easy to prepare. Many recipes for burghul pilaf combine it with meat or chicken and other ingredients. This one is the simplest. Use it to accompany any of the main dishes and as an alternative to rice.
Wash and drain the bulgar wheat. Bring the water to the boil, add a little salt and pour in the grain. Cook, covered, for 10-15 minutes or until it is tender and the water has been absorbed. Add a little more water if necessary.
Stir the butter and oil into the bulgar wheat and let it rest for a few minutes before serving.
