Fudge Filling


  • 4 oz. (120 g.) soft brown sugar
  • 2 oz. (60 g.) butter
  • 1 teaspoon coffee essence
  • 1 tablespoon golden syrup
  • 1 tablespoon milk


Bring all the ingredients slowly to the boil and stir all the time while gently simmering for 10 minutes. Remove from the heat and allow to cool for 10 minutes. Then beat until thick and creamy. When quite cold use to fill a cake. Excellent if chopped nuts are added.
