This delicious cold sauce is light and fresh. Truly superb with cold dishes.

Ingredients

  • 5 pounds ripe tomatoes, peeled
  • 2 large onions, quartered
  • 2 garlic cloves, peele

Method

Put half of the tomatoes in a blender with half of the onions and 1 garlic clove. Blend at high speed for 5 minutes and pour into a large bowl. Put the second batch in the blender—the remaining tomatoes, onion, and garlic clove, along with the basil, parsley, and oil. Blend for 5 minutes, then add it to the other batch in the bowl. Season with salt and pepper, stir well and refrigerate covered
