Ingredients

  • 1 tablespoon bacon drippings
  • 1 loin of pork, about 6 pounds, boned
  • 2 small carrots, sliced
  • 2 small parsnips, sliced
  • 2 small green peppers, sliced
  • 2 small tomatoes, chopped
  • teaspoons paprika
  • 2 tablespoons lemon juice
  • 1 bay leaf
  • 1 cup Hungarian red wine
  • 6 dried juniper berries
  • Pinch of salt

Method

  1. Preheat oven to 500°F. Heat drippings in a casserole and brown the pork quickly and evenly for about 15 minutes.
  2. Add remaining ingredients and cover. Reduce heat to 350°F. and cook the pork for 3 to 4 hours, or until done.
  3. Remove meat to serving platter and slice. Force sauce and vegetables through a sieve and pour over meat.
