Ingredients for örkényi

  • Rostélyos, omitting bacon, sauerkraut, sausage, 1 cup sour cream, fresh tomato and wine
  • ¼ pound boiled ham, ground
  • ¼ pound Virginia or Westphalian ham, or prosciutto, ground
  • 2 tablespoons light cream
  • 1 tablespoon flour
  • 1 egg
  • 2 tablespoons tomato purée

Method

Follow the same preparation as for Örkényi rostélyos, except make the filling of ground ham mixed with light cream, flour and egg. Cook the filling, stirring constantly, until the egg is scrambled.

Use tomato purée instead of fresh tomato.
