Liptó Potatoes

Liptói Burgonya


  • 3 pounds potatoes
  • ½ teaspoon salt
  • ¾ pound Liptó or Brindza cheese
  • ¼ pound and pound butter
  • ¼ pound double-smoked bacon
  • 1 tablespoon minced fresh dill
  • ¼ cup bread crumbs


  1. Preheat oven to 350°F. Cook potatoes in 3 cups salted water until tender, but make sure you don’t overcook them. Peel and cut into slices.
  2. Rice the cheese. Melt the ½ pound butter and mix with the cheese. Set aside.
  3. Cut bacon into ½-inch dice, and render in a frying pan for about 15 minutes.
  4. Take out the fairly crisp bacon cracklings and add them to the cheese mixture. Also mix in the dill. Then gently add the potatoes to the cheese mixture; try not to break up the potato slices too much.
  5. Butter a torte pan with the pound butter. Sprinkle bread crumbs over it. Spoon the potato-cheese mixture into the pan. Bake in the preheated oven for about 30 minutes.
  6. Remove potatoes from oven. Cut and serve the dish like a torte.
