There are two ways of making dulce de leche. You can either simmer a can of sweetened condensed milk for 3 hours, submerged in a saucepan of water (be careful not to let the water evaporate), or follow the recipe below.

Ingredients

For the Caramel:

  • 2 tablespoons demerara sugar
  • 2 tablespoons lightly salted butter
  • 395

Method

MELT THE DEMERARA SUGAR WITH THE BUTTER IN A SAUCEPAN. Pour in the condensed milk and heat, then lower the heat and let it simmer gently for about 15 minutes, until the mixture caramelises.

POUR THE DULCE DE LECHE INTO A CLEAN CONTAINER, DESSERT BOWLS OR RAMEKINS, THEN LET IT COOL BEFORE SERVING. You can also use it in other desserts, for example as a dip for the mini-chou
