Congee is primarily a jet lag dish for me when I’m overseas. I love it when I’m tired and a bit out of sorts. It’s extremely comforting. Traditionally congee is just rice and water, but I think chicken adds a lot to it. Over my years of traveling, I’ve seen so many high rollers, gamblers, and others night owls enjoy it immensely in the morning. I get it. You can put raw egg or century egg in my congee if you want. I think both are really tasty additions.
