This was one of my favorite dishes when I lived in Malaysia in the late 1990s, opening one hotel and running another. Satay is a wildly delicious and ubiquitous street food over there, that’s popular at all times of day. I ate a lot of it during those years. Be sure to get your pan ripping hot when you sear the chicken skewers because that’s how you develop significant color and flavor.
