19 Jus de Veau Lié

Thickened Veal Gravy


  • 4 litres (7 pt or U.S. pt) Brown Veal Stock 30 g (1 oz) arrowroot



Bring the stock to the boil then allow it to reduce by three-quarters to yield 1 litre ( pt or U.S. cups). Dilute the arrowroot in a little cold stock, stir into the boiling stock and cook for 1 minute. Pass through a fine strainer.
