Mustard Sauce

Method

To the required amount of Butter Sauce add, away from the heat, 1 tbs made English mustard per dl (9 fl oz or 1⅛ U.S. cups) of sauce.

This sauce should normally be prepared to order; if not being served immediately it should be kept in the Bain-marie making sure that it does not boil.
