247 Beurre Noir, for large numbers


For 10 persons: cook 125 g ( oz) butter in a frying pan until brown in colour and pass through a fine strainer into a Bain-marie pot. When lukewarm, add 1 tsp vinegar previously reduced with a little coarsely ground pepper. When required for service, reheat this butter to the correct serving temperature; add a little coarsely chopped parsley fried in butter and 1 tbs capers to the food being prepared. Finally pour the Beurre Noir over it.
