273 Stock for Game Aspic Jelly

Ingredients

Nutritive Ingredients

  • 1 kg ( lb) knuckle of veal
  • 2 kg ( lb) shank of beef
  • 750 g (1 lb 10 oz) veal bones, broken small
  • kg (3 lb 14 oz) trimmings and carcasses of game

Gelatinous Ingredients

  • 3 small calf’s feet, boned and blanched

Flavouring Ingredients

  • 200 g (7 oz) carrot
  • 200 g (7 oz) onion
  • 50 g (2 oz) leek
  • 75 g ( oz) celery
  • 1 large Bouquet garni with additional thyme
  • 7–8 juniper berries

Liquid

  • 8 litres ( gal or U.S. gal) water

Method

All the above ingredients must be coloured in the oven.

Proceed in the same way as for Game Stock for sauces.
