Method

2 litres ( pt or 9 U.S. cups) Chicken Consommé.

Garnish

1 tbs each of carrot and turnip cut in daisy shape pieces, 3 mm (⅛ in) thick, then cooked in White Bouillon and glazed; 2 tbs asparagus tips; 1 tbs peas; 2 tbs small Quenelles prepared from fine chicken forcemeat containing a purée of pistachio nuts, piped in the shape of small long leaves or other suitable shape; Pluches of chervil.
