Method

2 litres ( pt or 9 U.S. cups) Chicken and Pigeon Consommé.

Garnish

10 very small dariole moulds of lightly seasoned crayfish forcemeat, poached at the last moment; 2 tbs Julienne of very black truffle cooked in Frontignan wine. Serve separately 10 puff pastry patties each enclosing a boned Ortolan which has been stuffed with Parfait of Foie gras.
