Method

2 litres ( pt or 9 U.S. cups) Chicken Consommé lightly thickened with tapioca.

Garnish

2 tbs each of three different kinds of grooved Quenelles made from chicken forcemeat as follows: 1) white Quenelles by the addition of cream, 2) red Quenelles by the addition of a little thick tomato purée and 3) light green Quenelles by the addition of a purée of pistachio nuts or spinach; Pluches of chervil.
