Method

Mix together litres (2⅝ pt or U.S. cups) Crème Parmentier and dl (9 fl oz or 1⅛ U.S. cups) Crème de Céleri-rave and finish with dl (9 fl oz or 1⅝ U.S. cups) Brunoise of carrot and white of celery cooked in White Bouillon.
