791 Invalid Soup

Method

Finely pound 250 g (9 oz) white of chicken which has been cooked in Bouillon; add dl (9 fl oz or 1⅛ U.S. cups) boiling milk and pass through a fine sieve. Add a further 4 dl (14 fl oz or U.S. cups) boiling milk then pass through a fine strainer. Reheat without boiling and finish at the last moment with a liaison of 5 egg yolks and 1 dl ( fl oz or ½ U.S. cup) old Marsala.
