831 Soupe de l’Estérel, or Soupe des Maures

Method

Stew 60 g (2 oz) shredded onion with 30 g (1 oz) butter without colouring; moisten with 5 dl (18 fl oz or U.S. cups) White Bouillon or cooking liquid from haricot beans; add 150 g (5 oz) pumpkin cut in dice and 225 g (8 oz) fresh undried haricot beans or 200 g (7 oz) of cooked ones. Allow to cook gently, pass through a fine sieve then add 1 litre ( pt or U.S. cups) White Bouillon to this purée. Bring the soup to the boil, sprinkle in 75 g ( oz) vermicelli and continue cooking until ready.
