Method

Coat the toasts with a thick layer of the following mixture: 125 g ( oz) soft fresh butter, 60 g (2 oz) each of freshly grated Gruyère and Parmesan cheese, ½ tbs thick cream, a pinch of salt and a touch of Cayenne.

Cover the layer with 2 half circles to the same size of the Canapé, one cut from a thin slice of Saucisson de Lyons and the other from Gruyère cheese.
