1352 Cromesquis d’Oeufs à la Polonaise

Method

Prepare the mixture as for Cromesquis d’Oeufs replacing the mushrooms with flap mushrooms and the Sauce Allemande with reduced Sauce Duxelles. Divide into 60 g (2 oz) pieces, mould into rectangles and enclose each in a very thin pancake. Dip in light batter and deep fry as required.

Serve accompanied with a thin Sauce Poivrade.
