Lamb Cutlets


It is customary to serve two lamb cutlets per person.

Excepting any indication to the contrary, lamb cutlets should be dipped in melted butter and sprinkled with fine breadcrumbs before grilling. If they are to be shallow fried they should be floured, egg and breadcrumbed excepting where the preparation requires them to be stuffed or served with a sauced garnish.
