Poach the fattened pullet.
Arrange on a dish and coat with Sauce Suprême which has been finished with 150 g (5 oz) pimento butter per 1 litre (1¾ pt or 4½ U.S. cups) of sauce. Surround with braised, stuffed pimentos filled with rice and shallow fried round slices of eggplant.
