Method

Stuff the fattened pullet with 400 g (15 oz) creamed maize mixed with 50 g (2 oz) diced pimento and Poêlé it in the usual manner.

Arrange on a dish and surround with alternate moulds of Riz Pilaw and fried bananas.

Deglaze the pan with a little brown veal stock, skim off the fat, pass through a fine strainer and serve it separately with the pullet.
