There are two distinct kinds of chicken cutlet—the first being the breasts or fillets cut from a chicken with the winglet bone left attached; these cutlets are described in the beginning of the section devoted to Fillets, Suprêmes and Cutlets of Chicken. The terms Cutlet and Suprême in this case are synonymous.
In the second, a chicken cutlet is simply a variation of a chicken Croquette but in this case moulded cutlet-shape. See Croquettes de Volaille in the section on Hot Hors-d’oeuvre.
