Method

Place 100 g ( oz) butter in a frying pan and cook until it begins to turn brown; immediately add 24 very fresh cocks’ kidneys, season them with salt, pepper and a touch of Cayenne and cook for 5–6 minutes.

Cut 12 small rounds of bread with a plain cutter 2 cm (⅘ in) in diameter and 8 mm (⅓ in) thick and fry them in butter at the last moment.

Add 4 very black truffles cut in fairly thick slices to the required amount of reduced Sauce Demi-glace; add in the drained kidneys, the Croûtons, 50 g (2 oz) good butter and a few drops of lemon juice. Shake the pan to ensure the complete mixing of the ingredients.

Place in a very hot silver timbale and serve immediately.
