Method

About 10 minutes before the Fricassée is cooked, add 15 button mushrooms and 18 crayfish cooked as for Bisque and shelled.

Finish the sauce with 50 g (2 oz) Crayfish Butter made from their shells and also the cooking liquor from the crayfish passed through a muslin.
