3337 Pâté Chaud Financière


Line a round fluted pie mould with good short paste and cover this with a 2 cm (⅘ in) thick layer of truffled Godiveau. Fill with a cold Financière garnish containing extra cockscombs and kidneys, and mixed with thick Sauce Madère.

Cover with a layer of Godiveau on top, close up the pie with a round of paste sealing it well and bake in a fairly hot oven for approximately 50 minutes.
