Decorate a buttered Charlotte mould with noodle paste then line it with short paste. Cover the bottom and sides with tomato and cheese-flavoured spaghetti prepared and fill with the Financier garnish; cover with more of the spaghetti then close up the mould with a round of paste, sealing it well to the edge; bake in a hot oven for 45-50 minutes.
Demould the Timbale on to a dish, remove the top which was previously the bottom and cut it into small triangles; arrange these around the Timbale.
Coat the bared filling with a few spoonsful of tomato sauce and decorate the surface with mushrooms, cockscombs and slices of truffle.
