3800 Mustard and Cream Dressing

Method

This is used mainly for salads of beetroot, celeriac and for Green Salads where beetroot is the main ingredient.

It is made in the proportion of 1 dsp of mustard mixed into 2 dl (7 fl oz or ⅞ U.S. cup) of light fresh cream plus the juice of a small lemon and salt and pepper.
